A delightful cherry cheesecake with a creamy texture and a buttery crust, topped with sweet-tart cherry pie filling.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 4 (8 ounce) packages cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 can (21 ounces) cherry pie filling

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press into a 9-inch springform pan.
  3. Beat the cream cheese until smooth, then add in 1 cup sugar and vanilla extract.
  4. Add the eggs, one at a time, beating well after each addition, then pour over the prepared crust.
  5. Bake for 55-60 minutes, until the center is just set.
  6. Cool the cheesecake to room temperature, then refrigerate for at least 4 hours.
  7. Top with cherry pie filling before serving.

Notes

For best results, allow the cheesecake to cool gradually in the oven and consider using a water bath to prevent cracks.
