A delightful balance of sweet and tart flavors, this homemade cherry pie is perfect for summer. Enjoy it warm with ice cream or at room temperature.

  • 1 pie crust
  • 2 cups fresh or frozen cherries
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1/4 teaspoon almond extract
  • 1 egg (for egg wash)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Roll out the pie crust and fit it into a 9-inch pie plate.
  3. Combine the cherries, sugar, cornstarch, lemon juice, and almond extract in a bowl.
  4. Pour the cherry filling into the prepared crust and dot with butter.
  5. Cover with another layer of pie crust, crimp the edges, and cut slits in the top.
  6. Brush the top crust with beaten egg for a golden finish.
  7. Bake in the preheated oven for 25-30 minutes, until the crust is golden brown.
  8. Allow to cool before serving.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat. Leftovers can be stored at room temperature for up to two days or in the refrigerator for up to one week.
