Ingredients

Scale
  • 2 lbs chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons chipotle in adobo sauce
  • 1 tablespoon honey
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Mix the olive oil, chipotle in adobo, honey, cumin, garlic powder, onion powder, paprika, salt, and pepper in a bowl.
  2. Coat the chicken thighs in the marinade and let sit for at least 30 minutes, or overnight for best results.
  3. Preheat your grill or skillet over medium-high heat.
  4. Cook the chicken for about 6-7 minutes per side until the internal temperature reaches 165°F.
  5. Remove from heat and squeeze fresh lime juice over the chicken.
  6. Slice the chicken as desired and serve in burritos, tacos, or alongside rice and beans.

Notes

Chicken thighs work best but you can replace them with chicken breasts. Adjust chipotle based on your heat preference.
