A decadent blend of Crème Brûlée and creamy cheesecake, topped with a caramelized sugar crust for a delightful dessert experience.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 3 tablespoons sugar (for topping)
  • 1 teaspoon vanilla bean paste (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs with melted butter and 1/4 cup sugar, then press into the bottom of the springform pan.
  3. Beat the softened cream cheese until smooth, incorporating granulated sugar and vanilla extract.
  4. Mix in the eggs one at a time until fully incorporated.
  5. Pour in the heavy cream, mixing until smooth.
  6. Carefully pour the cream cheese mixture over the crust.
  7. Bake for about 60-70 minutes until the center is set but slightly jiggly.
  8. Let the cheesecake cool to room temperature and then refrigerate for at least 4 hours.
  9. Before serving, sprinkle the top with sugar and caramelize it using a kitchen torch.

Notes

Use room temperature cream cheese for a smooth texture and avoid lumps. Chill the cheesecake adequately for best results.
