Succulent grilled chicken smothered in a zesty chimichurri sauce, perfect for summer gatherings.

Ingredients

  • 4 chicken breasts
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes.
  3. Preheat the grill to medium heat.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  5. Serve the chicken topped with the remaining chimichurri sauce.

Notes

For juicier chicken, pound the breasts to an even thickness before marinating. Adjust the chimichurri heat by altering the red pepper flakes.
