A buttery, flaky tart filled with vibrant, tangy lemon curd, topped with whipped cream.

Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 large eggs
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix together the flour, softened butter, powdered sugar, egg yolk, and salt. Blend them until a soft dough forms. Next, press this dough evenly into a tart pan and bake for 15 minutes until lightly golden.
  2. Whisk together the granulated sugar, fresh lemon juice, lemon zest, and eggs until well combined. Pour this bright, tangy mixture over your baked crust, spreading it evenly.
  3. Return the tart to the oven and bake for an additional 20-25 minutes, or until the lemon filling is set and slightly wobbly in the center.
  4. Allow the tart to cool completely before slicing and serving. If you want to elevate it, top each slice with a generous dollop of whipped cream just before serving.

Notes

Pair with herbal tea or lemonade. Can be topped with fresh mint or additional lemon zest.
