  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons butter
  • 3 egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bake the pie crust according to package directions until golden brown.
  3. Whisk together sugar, cornstarch, and salt in a saucepan.
  4. Add water to the dry mixture and cook over medium heat, stirring constantly until it thickens.
  5. Whisk the egg yolks in a separate bowl, then gradually stir in a small amount of the hot mixture to temper them.
  6. Stir in lemon juice, lemon zest, and butter, then pour the filling into the baked pie crust.
  7. Beat egg whites with cream of tartar until soft peaks form.
  8. Add sugar gradually, continuing to beat until stiff peaks form.
  9. Spread the meringue over the hot lemon filling, sealing it to the crust edges.
  10. Bake for about 10 minutes, or until the meringue is golden brown.
  11. Let the pie cool before serving.

Notes

For crispier meringue, bake at a lower temperature for a longer time. Use fresh lemons for the best flavor.
