A vibrant and nourishing Mediterranean quinoa salad filled with fresh vegetables, feta cheese, and a zingy dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the quinoa under cold water and drain. In a saucepan, combine the quinoa and water (or broth), and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until the quinoa is fluffy and water is absorbed. Let it cool.
  2. Prepare the vegetables by combining the diced cucumber, cherry tomatoes, red bell pepper, red onion, olives, and feta cheese in a large bowl.
  3. Add the cooled quinoa to the vegetable mixture, ensuring an even distribution of flavors and textures.
  4. Whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl. Pour the dressing over the salad and toss to combine.
  5. Garnish with fresh parsley before serving. Enjoy!

Notes

Rinse the quinoa well to remove its natural coating that can taste bitter. Customize the vegetables based on what’s in season or available.
