A warm and hearty baked oatmeal packed with mixed berries, perfect for breakfast or a delightful snack.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or dairy-free alternative)
  • 1 cup mixed berries (fresh or frozen)
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg (optional, for extra protein)
  • 1/4 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the rolled oats, baking powder, salt, and cinnamon in a large bowl.
  3. Combine the milk, maple syrup, vanilla extract, and egg (if using) in another bowl and whisk until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Fold in the mixed berries gently.
  6. Pour the mixture into a greased baking dish.
  7. Sprinkle chopped nuts or seeds on top if desired.
  8. Bake for 30-35 minutes or until the top is golden and the oatmeal is set.
  9. Let cool slightly before serving.

Notes

Top with Greek yogurt or additional maple syrup for serving. Store leftovers in an airtight container for up to five days.
