  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a small saucepan over low heat.
  3. Pour the melted butter into a round cake pan, swirling to coat the bottom.
  4. Sprinkle the brown sugar evenly over the butter.
  5. Arrange the pineapple slices on top of the brown sugar.
  6. Place a cherry in the center of each pineapple slice.
  7. Combine the flour, sugar, salt, and baking powder in a mixing bowl.
  8. Whisk together the milk, eggs, and vanilla in another bowl.
  9. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  10. Pour the batter over the arranged pineapple and spread it evenly.
  11. Bake for 40-45 minutes until a toothpick comes out clean.
  12. Invert the cake onto a serving plate after cooling slightly.

Notes

For a tropical twist, swap pineapple with peaches or pears. This cake pairs wonderfully with whipped cream or vanilla ice cream.
