Delicious salmon kabobs grilled to perfection with vibrant vegetables.

Ingredients

  • 1 lb salmon fillet
  • 1 bell pepper (any color), cut into squares
  • 1 red onion, cut into squares
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Skewers (wooden or metal)

Instructions

  1. Cut the salmon fillet into bite-sized cubes and place them in a medium bowl.
  2. Add olive oil, lemon juice, garlic powder, salt, and black pepper to the bowl with the salmon. Toss gently.
  3. Prepare the bell pepper and red onion by cutting them into squares about the same size as the salmon cubes.
  4. Assemble the kabobs by threading salmon, bell pepper, and onion onto the skewers.
  5. Preheat your grill to medium-high heat.
  6. Grill the kabobs for about 10-12 minutes, turning occasionally until the salmon is opaque.
  7. Serve the kabobs hot, with a splash of lemon juice or your favorite sauce.

Notes

For a beautiful presentation, use a mix of colorful bell peppers. If using wooden skewers, soak them in water for 30 minutes before grilling.
