A vibrant and refreshing shrimp ceviche bursting with flavors of lime, tomatoes, and onions, perfect for summer gatherings.

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1/2 cup fresh lime juice
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, diced (optional)
  • Salt and pepper to taste

Instructions

  1. Marinade the shrimp in a bowl with lime juice. Cover and refrigerate for about 2 hours, or until the shrimp turn pink and opaque.
  2. Mix in the chopped tomatoes, red onion, cilantro, and jalapeño (if using). Drain excess lime juice first.
  3. Season with salt and pepper to taste, adjusting to preference.
  4. Serve chilled with tortilla chips or on its own.

Notes

For the best results, use the freshest shrimp possible. Store leftovers in an airtight container in the refrigerator for up to 2 days.
