Spinach and Feta Frittata

A delightful frittata made with fresh spinach and tangy feta cheese, perfect for brunch or any meal of the day.

Ingredients

  • 6 eggs
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup milk
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the diced onions and minced garlic in olive oil over medium heat for 3-4 minutes.
  3. Add the chopped spinach and cook until wilted, about 2 minutes.
  4. Whisk together the eggs, milk, salt, and pepper in a mixing bowl.
  5. Stir in the sautéed spinach mixture and crumbled feta into the whisked eggs.
  6. Pour the mixture into the skillet and let sit undisturbed for 5 minutes.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until the center is firm and the top is lightly golden.
  8. Cool slightly before slicing and serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or enjoy cold.
