A comforting and nostalgic dish combining the flavors of Mexican cuisine with pasta, perfect for any gathering.

  • 8 ounces rotini pasta
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes (15 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Optional toppings: sour cream, green onions, cilantro

Instructions

  1. Boil the Pasta: Cook rotini pasta according to package instructions. Drain and set aside.
  2. Brown the Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Flavor Infusion: Stir in taco seasoning and diced tomatoes (with juices). Cook for 2-3 minutes.
  4. Create the Taco Mixture: Add black beans, corn, and salsa to the skillet. Mix well and let it simmer for 5 minutes.
  5. Combine the Pasta: Combine the cooked pasta with the meat mixture in the skillet. Stir well to ensure everything is evenly coated.
  6. Add the Cheese: Sprinkle cheese on top and cover until melted, about 2-3 minutes.
  7. Serve with Toppings: Serve with optional toppings like sour cream, green onions, or cilantro.

Notes

Leftover Taco Pasta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth.
