Delightful and fresh Vietnamese spring rolls filled with shrimp, vegetables, and herbs, wrapped in rice paper.

Ingredients

  • Rice paper wrappers
  • Rice noodles
  • Shrimp (or tofu for vegetarian)
  • Lettuce leaves
  • Mint leaves
  • Cilantro
  • Carrots
  • Cucumber
  • Hoisin sauce
  • Peanut sauce

Instructions

  1. Prepare the rice noodles according to the package instructions. Once cooked, drain and set aside, letting them cool slightly.
  2. Soak the rice paper wrappers in warm water for about 15-20 seconds until they become pliable.
  3. Layer a small amount of prepared rice noodles, shrimp (or tofu), lettuce leaves, mint, cilantro, julienned carrots, and cucumber on the bottom third of the wrapper.
  4. Roll the wrapper tightly from the bottom over the filling, tucking in the sides as you go.
  5. Serve the spring rolls on a platter with hoisin and peanut sauce for dipping.

Notes

Keep finished rolls covered with a damp cloth to prevent drying out. Customize fillings to your preference.
