Deliciously stuffed zucchini boats filled with savory ground turkey and topped with melted cheese, perfect for a hearty and healthy meal.

Ingredients

  • 4 medium zucchinis
  • 1 lb ground turkey
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create a boat shape.
  3. Heat a skillet over medium heat and add a drizzle of olive oil. Sauté the onion and garlic until fragrant, about 2-3 minutes.
  4. Add the ground turkey to the skillet, seasoning it with salt, pepper, and Italian seasoning. Cook until browned, about 5-7 minutes.
  5. Stir in the marinara sauce and let it simmer for a few minutes.
  6. Carefully fill each zucchini boat with the turkey mixture, topping with mozzarella cheese.
  7. Place the zucchini boats on a baking sheet and bake for 20-25 minutes, until tender and cheese is bubbly.
  8. Remove from the oven and let cool slightly before serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. You can freeze them as well for future meals. Adjust seasoning to taste and feel free to substitute turkey with chicken or a vegetarian option.
