Birria Tacos

Delicious and savory Birria Tacos filled with tender, spiced beef and served with a flavorful broth for dipping.

Ingredients

  • 3 lbs beef (chuck roast or short ribs)
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cups beef broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onions for garnish
  • Lime wedges

Instructions

  1. Soak the dried chiles in hot water until softened. Remove stems and seeds, then blend with onion, garlic, cumin, oregano, and beef broth until smooth.
  2. Combine the beef and the blended chile mixture in a large pot. Add beef broth and bay leaf, then season with salt and pepper.
  3. Simmer the beef over low heat for 120-180 minutes or until tender and easily shredded.
  4. Shred the beef with forks and reserve the cooking liquid.
  5. Prepare the corn tortillas by heating them on a skillet. Dip each tortilla in the reserved liquid to soak up flavor.
  6. Assemble the tacos by filling the dipped tortillas with shredded beef, topping with cilantro and onions. Serve with lime wedges.

Notes

For extra flavor, consider adding cinnamon or vinegar to the cooking liquid.
