Delightful blueberry muffins that are fluffy and bursting with juicy blueberries, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Combine the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the fresh blueberries carefully.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool for a few minutes before transferring to a wire rack.

Notes

For best results, use fresh blueberries. Store leftovers in an airtight container for up to three days.
