Crispy tortillas filled with seasoned shredded chicken, gooey cheese, and tangy Buffalo sauce, served with a cool dipping sauce.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large tortillas
  • 1/2 cup ranch or blue cheese dressing (for serving)
  • 1 tablespoon olive oil
  • Optional: diced celery or green onions for garnish

Instructions

  1. Mix the chicken with Buffalo sauce until well coated.
  2. Heat a skillet over medium heat and add olive oil.
  3. Prepare the tortilla with cheese by placing it in the skillet and sprinkling half of it with cheese.
  4. Add the chicken mixture on top of the cheese.
  5. Fold the tortilla over and cook for 2-3 minutes on each side until golden and cheese is melted.
  6. Repeat with remaining tortillas and fillings.
  7. Serve with ranch or blue cheese dressing and garnish with celery or green onions if desired.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in a skillet for best results.
