Classic Cherry Pie

A delightful cherry pie filled with sweet and tart juicy cherries, nestled in a flaky crust, perfect for any occasion.

Ingredients

  • 2 cups fresh or frozen cherries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 tablespoon butter
  • 1 package pie crusts (2 crusts)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract.
  3. Cook over medium heat until the mixture starts to bubble and thicken.
  4. Remove from heat and let cool slightly.
  5. Place one pie crust into a 9-inch pie pan and pour the cherry filling into the crust.
  6. Dot with butter.
  7. Place the second pie crust over the filling, seal and flute the edges, then cut slits in the top crust.
  8. Bake for about 45-50 minutes or until the crust is golden brown.
  9. Let cool before serving.

Notes

Serve warm or at room temperature, possibly with vanilla ice cream or whipped cream.
