A delightful blend of classic cheesecake and the rich, caramelized topping of crème brûlée, perfect for any special occasion.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup brown sugar (for topping)
  • 1 teaspoon vanilla (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs with melted butter and 1/4 cup of granulated sugar until thoroughly combined.
  3. Press this mixture firmly into the bottom of a springform pan.
  4. Beat together the softened cream cheese, remaining granulated sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Blend in the heavy cream until the mixture is luxuriously smooth.
  7. Pour the cheesecake filling over the prepared crust.
  8. Bake for about 1 hour, or until the center is set but slightly jiggly.
  9. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  10. Sprinkle the brown sugar over the top and caramelize with a kitchen torch before serving.

Notes

Ensure cream cheese is at room temperature to avoid lumps. If you don’t have a kitchen torch, broil to caramelize but watch closely.
