Delicious and convenient freezer breakfast burritos filled with scrambled eggs, cheese, bell peppers, and your choice of sausage or bacon.

Ingredients

Scale
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup cooked and crumbled sausage or bacon
  • 6 large flour tortillas
  • Salt and pepper to taste
  • Optional: salsa, avocado, or hot sauce for serving

Instructions

  1. Whisk the eggs and milk in a large bowl until well combined. Season with salt and pepper.
  2. Sauté the diced bell peppers in a skillet over medium heat until softened, about 3-5 minutes.
  3. Pour the egg mixture into the skillet with the peppers and scramble until the eggs are fully cooked, about 5-7 minutes.
  4. Fold in the shredded cheese and the cooked sausage or bacon, allowing the cheese to melt.
  5. Lay a tortilla flat and spoon a generous amount of the egg mixture in the center. Fold in the sides and roll tightly.
  6. Continue rolling remaining tortillas and filling until all burritos are assembled.
  7. Wrap each burrito in plastic wrap and store in a freezer-safe bag or container.
  8. To reheat, unwrap a burrito and microwave for 2-3 minutes until heated through.

Notes

Customize the filling with different vegetables or proteins. Store in the freezer for up to 3 months.
