Irresistibly tangy lemon bars with a buttery crust and smooth filling, perfect for summer gatherings.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to ensure your lemon bars come out easily.
  2. Combine the all-purpose flour and powdered sugar in a bowl.
  3. Cut in the unsalted butter until the mixture resembles coarse crumbs.
  4. Press the crumb mixture into the bottom of the prepared baking dish. Bake for 15 minutes until lightly golden.
  5. Whisk together granulated sugar, eggs, fresh lemon juice, lemon zest, and salt until smooth and creamy.
  6. Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 20 minutes, or until the filling is set and slightly jiggly in the center.
  7. Cool completely, dust with powdered sugar, and cut into squares.

Store leftovers in an airtight container at room temperature for up to three days or refrigerate for up to a week.
