  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the flour, powdered sugar, and salt in a bowl. Cut in the softened butter until crumbly.
  3. Press the mixture firmly into a tart pan, creating an even layer.
  4. Bake the crust for 15-20 minutes until golden brown.
  5. Whisk together the eggs and granulated sugar in another bowl until smooth.
  6. Add the fresh lemon juice, lemon zest, and cornstarch, mixing until well combined.
  7. Pour the lemon mixture over the baked crust.
  8. Return the tart to the oven and bake for an additional 20-25 minutes until the filling is set.
  9. Cool at room temperature and then refrigerate before serving.
