A delightful dessert featuring a crisp shell that reveals a warm, gooey lemon center, reminiscent of summer adventures.

  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • Butter and flour for ramekins

Instructions

  1. Preheat the oven to 425°F (220°C). Grease four ramekins generously with butter and dust with flour.
  2. Melt the butter in a microwave-safe bowl. Add the powdered sugar and stir until smooth.
  3. Add the two large eggs and two egg yolks to the mixture. Whisk until combined and fluffy.
  4. Pour in the fresh lemon juice and lemon zest, mixing until well combined.
  5. Fold in the flour and salt until just incorporated; a few lumps are fine.
  6. Pour the batter into the prepared ramekins, filling them about three-quarters full.
  7. Bake for 12-14 minutes until the edges are set and the center is soft.
  8. Cool for a minute, then carefully invert each ramekin onto a plate and serve immediately.

Notes

Serve with vanilla ice cream or whipped cream for a delicious contrast.
