A light and refreshing cake bursting with the sweet flavor of mandarin oranges, perfect for any occasion.

  • 1 can (11 ounces) mandarin oranges, drained
  • 1 box (15.25 ounces) yellow cake mix
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 cup powdered sugar
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Combine the cake mix, eggs, and vegetable oil in a large bowl. Add the drained mandarin oranges, and mix until well blended.
  3. Pour the batter into your prepared baking pan, ensuring it’s evenly distributed.
  4. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Prepare the glaze by mixing the powdered sugar, orange juice, and vanilla extract in a small bowl.
  6. Drizzle the glaze generously over the cooled cake and enjoy!
