Ingredients
Scale
1 cup quinoa
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
Salt and pepper to taste
Instructions
Rinse the quinoa under cold water. In a pot, bring 2 cups of water to a boil. Add the quinoa, cover, and simmer for about 15 minutes until the water is absorbed. Once done, let it cool.
Combine the cooked quinoa with cherry tomatoes, diced cucumber, finely chopped red onion, Kalamata olives, crumbled feta cheese, and chopped parsley in a large bowl.
Whisk together 3 tablespoons of olive oil, 2 tablespoons of lemon juice, salt, and pepper in a small bowl until well blended.
Pour the dressing over the salad mixture and toss to combine so that every bite is bursting with flavor. Serve it chilled or at room temperature.
