Ingredients
Scale
2 salmon fillets
1 cup quinoa
2 cups water or vegetable broth
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, diced
1/4 cup kalamata olives, sliced
1/4 cup feta cheese, crumbled
1 lemon, juiced
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Rinse quinoa under cold water to remove bitterness. Combine with water or broth in a pot. Bring to a boil, then reduce heat, cover, and let it simmer for about 15 minutes until the liquid is absorbed. Fluff it with a fork and set aside.
Preheat your grill or pan over medium-high heat. Brush the salmon fillets with olive oil and season generously with salt and pepper. Grill or pan-sear them for about 4-5 minutes on each side until they’re beautifully golden and cooked through. Set aside to rest.
In a couple of serving bowls, scoop a generous portion of quinoa as the foundation. Top each with a grilled salmon fillet, then layer on the cherry tomatoes, diced cucumber, red onion, sliced olives, and crumbled feta.
Squeeze fresh lemon juice over the bowls and drizzle with a bit more olive oil. Finish with a sprinkle of fresh parsley.
Notes
Customize with your favorite Mediterranean ingredients, such as artichokes or roasted red peppers.
