A vibrant and nourishing Salmon Buddha Bowl packed with protein, healthy fats, and fresh vegetables.

Ingredients

Scale
  • 1 cup cooked quinoa
  • 4 oz grilled salmon
  • 1 cup mixed greens
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 cup shredded carrots
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Start by cooking the quinoa according to package instructions. This usually means rinsing it first and then boiling it in double the water until fluffy. Once it’s cooked, let it cool—a perfect time to prep your veggies while the grains settle.
  2. While the quinoa is cooling, fire up the grill (or a grill pan if you prefer). Season the salmon with salt and pepper, and grill until it’s perfectly cooked through, about 4-6 minutes per side depending on thickness.
  3. In a bowl (or two if you’re feeling generous), layer the cool, fluffy quinoa as the nourishing base.
  4. Top that quinoa mountain with a generous handful of mixed greens, followed by your lovely grilled salmon.
  5. Garnish the bowl with creamy avocado slices, halved cherry tomatoes, crisp cucumber rounds, and a sprinkle of shredded carrots.
  6. For an extra dose of flavor, drizzle tahini mixed with lemon juice over your beautiful creation.
  7. Season with a pinch of salt and pepper to taste. Serve immediately and bask in the glory of your healthy, scrumptious feast!
