A lighter take on classic shrimp scampi, featuring zucchini noodles instead of pasta for a fresh, low-carb meal.

  • 2 medium zucchinis, spiralized into noodles
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped for garnish

Instructions

  1. Sauté the garlic: In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic, stirring it gently, and sauté until fragrant—around 1-2 minutes.
  2. Cook the shrimp: Next, add the shrimp to the skillet. Cook until they turn pink and opaque, about 2-3 minutes per side.
  3. Season with zest: Once the shrimp are cooked, stir in the red pepper flakes (if desired), salt, pepper, and fresh lemon juice.
  4. Toss in the zoodles: Add the zucchini noodles to the skillet and toss them with the shrimp until just heated through, about 2 minutes.
  5. Garnish and serve: Remove the skillet from heat, garnish with freshly chopped parsley, and serve immediately.

Notes

For a creamier version, consider adding a splash of heavy cream before tossing in the zoodles. This dish pairs well with a green salad or roasted asparagus.
