Stuffed Bell Peppers

Comforting stuffed bell peppers filled with seasoned meat, rice, and topped with gooey cheese.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat and sauté onions and garlic until soft.
  4. Add ground meat and cook until browned.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Fill each bell pepper with the meat mixture and place in a baking dish.
  7. Top with shredded cheese.
  8. Cover with foil and bake for 25-30 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until peppers are tender and cheese is bubbly.

Notes

Use a mix of colored peppers for a vibrant dish. For a vegetarian option, substitute the meat with beans or lentils. Leftovers can be stored in the fridge for 3-4 days.
