A delicious and nutritious meal prep featuring succulent salmon, vibrant vegetables, and fluffy rice or quinoa, perfectly flavored with teriyaki sauce.

Ingredients

  • 4 salmon fillets
  • 1/2 cup teriyaki sauce
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 cups cooked rice or quinoa
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Marinate the salmon fillets in the teriyaki sauce for 15-30 minutes.
  3. Prepare a baking sheet by arranging the salmon, broccoli, red bell pepper, and snap peas.
  4. Drizzle the vegetables and salmon with olive oil, then sprinkle with salt and pepper.
  5. Bake for 15-20 minutes until the salmon is cooked through and vegetables are tender.
  6. Divide the cooked rice or quinoa into meal prep containers and top with the teriyaki salmon and veggies.
  7. Garnish with sesame seeds and chopped green onions before sealing the containers.
