A comforting dish of bell peppers stuffed with a savory blend of ground turkey, rice, and spices, baked to perfection.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds.
  3. Sauté the diced onion and minced garlic in a skillet until soft and fragrant.
  4. Cook the ground turkey in the skillet until browned, breaking it apart with a spatula.
  5. Combine the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper into the turkey mixture.
  6. Stuff each bell pepper with the turkey mixture, packing it tightly.
  7. Assemble the stuffed peppers in a baking dish, cover with foil.
  8. Bake for 30 minutes in the preheated oven.
  9. Final touches: remove foil, sprinkle cheese on top if using, and bake for an additional 10 minutes until cheese is melted.

Notes

For a spicy kick, add diced jalapeños or red pepper flakes. Leftovers can be stored in the fridge for up to 4 days or frozen before baking.
