Cauliflower Fried Rice

A light and nutritious twist on traditional fried rice, featuring riced cauliflower and vibrant vegetables.

Ingredients

  • 1 medium head of cauliflower
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Remove the leaves and stem from the cauliflower and cut it into florets. In a food processor, pulse the florets until they resemble rice grains.
  2. Heat vegetable oil in a large skillet over medium heat. Add the diced onions and carrots; cook until softened, about 4-5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Push the vegetables to the side of the skillet and add the beaten eggs. Scramble until fully cooked, about 2-3 minutes.
  5. Stir in the cauliflower rice and soy sauce. Cook for 5-7 minutes, stirring frequently, until the cauliflower is tender.
  6. Season with salt and pepper, then toss in the sliced green onions just before serving.

Notes

For a finer cauliflower rice, pulse the florets in batches. Consider adding more veggies like bell peppers or peas.
