Chicken Fried Rice

A comforting and versatile dish that turns leftover rice and chicken into a flavorful meal, perfect for any occasion.

Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, shredded
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
  3. Toss in the mixed vegetables and let them cook for another 2-3 minutes until they become tender and vibrant.
  4. Push the veggies to one side of the skillet, then pour the beaten eggs into the other side. Scramble them until completely cooked through.
  5. Add in the cooked rice and shredded chicken, gently stirring to mix with the veggies and scrambled eggs.
  6. Pour the soy sauce over the mixture and season with salt and pepper to taste, mixing everything well.
  7. Continue to stir-fry for 3-5 minutes until everything is heated through, ensuring every grain of rice is coated with flavor.
  8. Transfer to serving plates and garnish with chopped green onions. Serve warm and enjoy!

Notes

Use day-old rice for better texture and flavor absorption. Try adding sesame oil or chili sauce for an extra kick.
