A delightful no-bake dessert featuring a creamy mint filling and a crunchy chocolate crust, perfect for family gatherings.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 cup green crème de menthe
  • 1/2 cup white crème de cacao
  • 2 tablespoons gelatin
  • 1/4 cup cold water

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the chocolate cookie crumbs with the melted butter and powdered sugar until well mixed. Press this mixture into the bottom and up the sides of a pie pan to form a crust. Bake for 10 minutes, then let cool.
  2. Bloom the gelatin: In a separate bowl, bloom the gelatin in cold water for about 5 minutes. Then, heat the mixture until the gelatin dissolves completely.
  3. Whip the heavy cream in another bowl until soft peaks form. Gently fold in the melted gelatin, green crème de menthe, and white crème de cacao until well combined.
  4. Pour the mixture into the cooled pie crust and refrigerate for several hours or until set.
  5. Once set, slice and serve chilled. Indulge in the refreshing flavors and delightful texture of your homemade Grasshopper Pie!

Notes

Pair with whipped cream or fresh mint for garnish. Can be made a day in advance.
