A delightful Thai dessert that combines luscious mango with sticky rice and creamy coconut sauce.

Ingredients

Scale
  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes
  • Sesame seeds or mung beans for topping (optional)

Instructions

  1. Rinse the glutinous rice in cold water until the water runs clear, then soak for at least 4 hours or overnight.
  2. Steam the rice for about 30-45 minutes or until tender and translucent.
  3. Combine coconut milk, sugar, and salt in a saucepan. Heat gently while stirring until the sugar dissolves.
  4. Mix half of the coconut mixture with the steamed rice, allowing it to sit for about 30 minutes for flavors to meld.
  5. Slice the ripe mangoes into thin, even slices.
  6. Serve by placing a portion of sticky rice on a plate, adding mango slices next to it, and drizzle with remaining coconut sauce. Top with sesame seeds or mung beans if desired.

Notes

Use a rice cooker for convenience and ensure mangoes are ripe for best flavor. Store rice in an airtight container for up to 3 days.
