A vibrant and flavorful Mediterranean Pasta Salad that perfectly captures the essence of summer. This dish combines al dente pasta with fresh vegetables, olives, and feta, tossed in a zesty dressing.

Ingredients

Scale
  • 8 ounces pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, and cook the pasta according to package instructions until al dente. Once it’s perfectly firm to the bite, drain the pasta and rinse it under cold water to stop the cooking process and cool it down.
  2. Combine the fresh ingredients: In a large mixing bowl, combine the cooked pasta, halved cherry tomatoes, diced cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  3. Whisk together the dressing: In a separate small bowl, combine the olive oil, red wine vinegar, dried oregano, and a sprinkle of salt and pepper. Whisk together until well blended.
  4. Toss it all together: Pour the desired dressing over the pasta salad mixture and use tongs or a large spoon to toss everything together gently.
  5. Serve and enjoy: Enjoy this dish chilled or at room temperature. Serve it as a side dish or make it the star of your meal!
