Ingredients

Scale
  • 3–4 ripe peaches, sliced
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the all-purpose flour, granulated sugar, and salt in a large bowl.
  3. Add the cold, cubed unsalted butter to the flour mixture and mix until it resembles coarse crumbs.
  4. Gradually add the ice water and mix until the dough comes together.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  6. Roll out the chilled dough into a circle about 12 inches in diameter.
  7. Arrange the sliced peaches in the center of the dough, leaving a generous 2-inch border.
  8. Fold the edges of the dough over the peaches, creating a rustic crust.
  9. Beat the egg and brush it over the crust, then sprinkle coarse sugar on top.
  10. Bake for 40-45 minutes or until the crust is golden and the peaches are bubbly.
  11. Let it cool slightly before serving.
