Pineapple Upside Down Cake

A delightful homage to classic dessert-making with sweet, tangy pineapple and a buttery base.

Ingredients

  • 1/4 cup butter
  • 1 cup packed brown sugar
  • 1 can (20 ounces) sliced pineapple in syrup
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and generously grease a round cake pan.
  2. Melt the butter in a small saucepan or microwave, then pour it into the bottom of the prepared cake pan. Sprinkle with brown sugar.
  3. Arrange the pineapple slices atop the brown sugar layer, placing a Maraschino cherry in the center of each pineapple ring.
  4. Combine in a mixing bowl: flour, granulated sugar, milk, eggs, vanilla extract, baking powder, and salt. Mix until smooth.
  5. Pour the batter over the arranged pineapple and cherries in the cake pan.
  6. Bake for 35-40 minutes, until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then invert onto a plate to serve.

Notes

Pairs beautifully with vanilla ice cream or whipped cream. Leftovers can be stored in an airtight container.
