A vibrant and healthy bowl featuring grilled salmon, quinoa, and fresh vegetables.

Ingredients

Scale
  • 1 cup cooked quinoa
  • 4 oz grilled salmon
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1 cup spinach or mixed greens
  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce or dressing of choice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Start by cooking the quinoa according to package instructions until fluffy and delicious. This usually takes about 15 minutes depending on your quinoa type.
  2. While the quinoa cooks, grill or pan-sear the salmon until it’s cooked through and flakes easily with a fork, about 5-7 minutes per side depending on thickness. Season with salt and pepper for full flavor.
  3. While the quinoa and salmon are cooking, slice your avocado, halve the cherry tomatoes, and slice the cucumber. This makes for a colorful and fresh presentation.
  4. In a bowl, layer the cooked quinoa as the base, then add spinach, avocado, cherry tomatoes, and cucumber for a vibrant splash of color.
  5. Place the grilled salmon right on top of the veggie layers, allowing its rich flavor to shine through.
  6. Drizzle with olive oil and soy sauce—or your favorite dressing—then sprinkle with sesame seeds for that extra crunch and nutty flavor.
  7. Finish off with a sprinkle of salt and pepper to taste, serve immediately, and savor the delightful flavors of your creation!

Notes

To save time, prepare your quinoa ahead of time; it keeps well in the fridge for a week.
