Shrimp Fried Rice

A comforting dish of stir-fried rice with shrimp and vibrant vegetables that brings family memories to life.

Ingredients

  • 2 cups cooked rice
  • 1 cup shrimp, deveined and peeled
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium heat until it shimmers invitingly.
  2. Add the shrimp to the pan and sauté until they turn pink, about 2-3 minutes. Once cooked, set them aside.
  3. Toss in the mixed vegetables and stir-fry until they’re tender, about 3-4 minutes.
  4. Push the vegetables to one side and pour in the beaten eggs. Scramble until fully cooked, about 2 minutes.
  5. Add the cooked rice and soy sauce, mixing until heated through.
  6. Stir in the cooked shrimp and green onions. Season with salt and pepper, and serve hot.

Notes

Using leftover rice works best to prevent mushiness. Feel free to swap shrimp for chicken or tofu.
