A delightful strawberry shortcake featuring fluffy shortcakes layered with macerated strawberries and whipped cream.

Ingredients

Scale
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar (for dough)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. Combine sliced strawberries and 1/4 cup of sugar. Set aside to macerate for about 10-15 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Mix together the flour, 1/4 cup sugar, baking powder, and salt in a large bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the heavy cream and vanilla extract until a soft dough forms.
  6. Turn the dough onto a floured surface and knead gently.
  7. Roll out to a 1-inch thickness, and cut into rounds with a biscuit cutter.
  8. Place the rounds on a baking sheet and bake for 15-20 minutes until golden.
  9. Let the shortcakes cool slightly, then split them open. Layer with the macerated strawberries and top with whipped cream.

Notes

For best results, ensure your butter is ice-cold and don’t rush the maceration of the strawberries.
