A quick and flavorful dish featuring golden tofu and a medley of colorful vegetables, perfect for a busy weeknight.

  • 1 block Extra-firm tofu
  • 2 tablespoons Vegetable oil
  • 3 tablespoons Soy sauce
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 cups Mixed vegetables (like bell peppers, broccoli, and carrots)
  • 2 Green onions, sliced
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare the Tofu: Press and cube the tofu. Start by wrapping the tofu block in a clean kitchen towel and place something heavy on top for about 10 minutes to remove excess moisture. Once ready, cut it into bite-sized cubes.
  2. Heat the Oil: Heat vegetable oil in a pan over medium heat. Allow the oil to warm up for a couple of minutes until it shimmers, which indicates it’s hot enough for frying.
  3. Sauté Aromatics: Add the minced garlic and ginger to the pan and sauté until fragrant. This step adds an aromatic base to our stir fry, enhancing the overall depth of flavor.
  4. Cook the Tofu: Add the cubed tofu to the pan and cook until golden brown. This will take about 5-7 minutes, giving it a delightful crispy texture that contrasts beautifully with the tender vegetables.
  5. Stir-Fry the Vegetables: Add the mixed vegetables and stir-fry until they are tender yet crisp. This usually takes around 4-5 minutes. Feel free to get creative with your choice of veggies!
  6. Add the Soy Sauce: Pour soy sauce over the mixture and stir well. Ensure each piece of tofu and vegetable gets coated in that umami-packed sauce that brings everything together.
  7. Final Seasoning: Season with salt and pepper to taste. This is your opportunity to customize the flavor, so don’t be shy!
  8. Garnish and Serve: Garnish with sliced green onions before serving. Their fresh crunch adds a delightful garnish that elevates the dish visually and flavor-wise.

Notes

Great served over rice, quinoa, or noodles. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
