A warm and comforting recipe featuring lean ground turkey, colorful toppings, and customizable ingredients, perfect for weeknight meals.

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese
  • Sour cream for serving
  • Fresh cilantro for garnish

Instructions

  1. Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  2. Brown the turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until it’s browned and cooked through, around 5-7 minutes.
  3. Mix in the flavor: Stir in the taco seasoning and add a splash of water, mixing well. Let it simmer for a few minutes.
  4. Layer the bowls: In serving bowls, start by layering the cooked rice, followed by black beans, corn, and the turkey mixture. Top with diced tomatoes and diced avocado.
  5. Add the finishing touches: Sprinkle shredded lettuce and cheese over the top, then finish with a dollop of sour cream and a sprinkle of fresh cilantro.

Notes
