Ingredients

Scale
  • 2 lbs beef chuck roast
  • 2 lbs lamb shoulder
  • 5 dried guajillo chilies
  • 3 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp ground black pepper
  • Salt to taste
  • 6 cups beef broth
  • Tortillas
  • Chopped onions and cilantro for serving
  • Lime wedges for serving

Instructions

  1. Toast the dried chilies in a pan over medium heat until fragrant, about 2-3 minutes.
  2. Remove chilies from heat and soak in hot water for 15 minutes.
  3. Blend the soaked chilies with chopped onion, garlic, cumin, oregano, black pepper, and salt until smooth.
  4. Add beef chuck roast and lamb shoulder to a large pot, then pour in the blended chili mixture and beef broth. Bring to a simmer, cover, and cook for 2-3 hours.
  5. Remove the meat and shred it with two forks. Strain the broth to remove solid bits.
  6. Heat the tortillas in a skillet for about 30 seconds per side until warm and pliable.
  7. Fill each tortilla with shredded meat, sprinkling with fresh chopped onions and cilantro.
  8. Serve tacos alongside reserved broth for dipping, adding lime wedges for extra zing.
