Creamy and fruity cheesecake bars with a delightful graham cracker crust, perfect for summer picnics and cozy family dinners.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup blackberry puree
  • 1/2 cup fresh blackberries for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan to ensure easy release after baking.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl. Press this mixture into the bottom of the prepared pan to form a crust.
  3. Beat together the cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the blackberry puree until well combined, creating beautiful swirls. Pour the mixture over the crust.
  5. Bake in the preheated oven for 30-35 minutes or until set around the edges and slightly jiggly in the center.
  6. Cool at room temperature before chilling in the refrigerator for at least 2 hours.
  7. Cut into bars and top each piece with fresh blackberries before serving.

Notes

For a twist, try substituting different berry purees or add chocolate ganache for extra indulgence.
