These Blackberry Lime Bars are summer on a plate—tart lime balanced by sweet, juicy blackberries, encased in a crumbly buttery crust.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 large eggs
  • 1 cup fresh blackberries
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Mix together the all-purpose flour, powdered sugar, and softened butter until crumbly. Press this mixture firmly into the bottom of the prepared baking dish.
  3. Whisk together the granulated sugar, fresh lime juice, lime zest, and eggs until smooth.
  4. Add the salt and baking powder to the lime mixture, then gently fold in the fresh blackberries.
  5. Pour the filling over the crust and spread it evenly. Bake for 25-30 minutes, or until the filling is set and lightly browned on top.
  6. Allow the bars to cool completely in the dish before cutting into squares.

Notes
