Delightful and nutritious Blueberry Yogurt Clusters that are quick to prepare and perfect for snacking or as a healthy dessert.

Ingredients

Scale
  • 1 cup fresh blueberries
  • 1 cup Greek yogurt
  • 2 tablespoons honey (optional)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Mix the yogurt base: In a bowl, combine Greek yogurt, honey (if using), vanilla extract (if using), and a pinch of salt. Mix until smooth.
  2. Fold in the blueberries: Gently fold in the fresh blueberries, being careful not to mash them. You want to maintain those lovely, juicy spheres!
  3. Spoon the mixture onto a baking sheet: Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Space them out a bit, as they’ll need room to freeze.
  4. Freeze the clusters: Place the baking sheet in the freezer for about 120 minutes or until solid. This is the hardest part—waiting!
  5. Store for later enjoyment: Once frozen, transfer the clusters to an airtight container and store in the freezer until ready to enjoy.

Notes

Store these clusters in an airtight container in the freezer for up to 3 months. Feel free to experiment with different fruits and yogurts.
