A vibrant, creamy Cajun Chicken Pasta that’s sure to become a favorite in your household.

Ingredients

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Season chicken breasts with Cajun seasoning on both sides.
  3. Sear the chicken in a large skillet with olive oil over medium heat until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice.
  4. Sauté red and green bell peppers and onion in the same skillet until softened, about 3-4 minutes. Add garlic and sauté for another minute.
  5. Create the creamy sauce by pouring in heavy cream and bringing to a simmer. Stir in Parmesan cheese until melted and creamy.
  6. Combine cooked penne pasta and sliced chicken to the skillet; toss to combine. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For added flavor variations, feel free to use hot sauce or substitute the chicken with lentils for a vegetarian option.
